This is the best banana bread I’ve ever had. I am baking with Einkorn flour. You can use whatever flour you want, but make sure you weigh your flour for the best results. Plus, be mindful of the consistency.

Easy to follow caramelized Einkorn banana bread.

I don’t use Jovial flour because I grind my own, but their techniques and information are out of this world. I have friends who use their flour and love it. I’ve changed a few of the ingredients in the recipe, which will be below. Plus, the recipe also calls for a glaze that we don’t add.
Bake at 350 degrees for 40 to 50 minutes.
Supplies:
- Mixing bowl
- Blender
- Wooden spoon or other stirring utensil
- Sauce pan and stirring utensil
- Baking pan for cooking the bread. I use cast iron. A bread pan about 4.5″ x 8.5″
Ingredients: This is my rendition of the recipe.
- 240 grams whole grain Einkorn flour
- 1 teaspoon baking soda
- 65 grams of coconut oil. Plus extra oil to grease the pan. You can use a different oil, but the flavor will change.
- 3 large bananas (Ours weighed in at 1.5 pounds with the peels on.)
- 100 grams pure cane organic sugar
- 1 tablespoon mollases
- 3 large eggs
- 2 pinches of ground cinnamon
Directions:
- Preheat oven to 375 degrees.
- Grease cast iron pan and put it in the oven to heat. Use the same oil to grease the pan as you used in the recipe.
- In a saucepan, melt the coconut oil. Add sugar and molasses and stir until it starts to boil. Turn down the heat and add the bananas.
- Cook the mixture for about 5 to 10 minutes or until the bananas are soft and cut or mush easily.
- Let the mixture cool to the touch.
- In another bowl, add flour, baking soda, and cinnamon. Stir together.
- Once the banana mix is cool, pour it into a blender, add eggs and blend. You can use a beater if you choose. The mixture needs to be smooth.
- Add the banana mixture from the blender into the flour bowl and mix well.*
- Once mixed and the oven is up to temperature, take out the pan and pour the mixture into it.
- Turn oven down to 350 degrees and bake until you can place a fork, knife or tooth pick into the midlde and it comes out clean.
- Once finished, take the bread out of the oven and remove it from the pan. You can slide a knife around the outside between the bread and the pan, making sure the batter is not stuck.
- Let cool for about an hour. The bread will continue to cook inside very slowly while it’s still warm.

*With Einkorn flour, you want to let the batter sit for a few minutes after stirring to make sure you have the right consistency. Einkorn absorbs liquid more slowly than other flours.
